A delicious and comforting 1-Pot Potato Soup, perfect for chilly days and nostalgic evenings.

Ingredients

  • 4 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk or cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Melt the butter over medium heat until bubbly and fragrant.
  2. Add the chopped onion and minced garlic, and sauté until the onion is translucent and tender, about 3-4 minutes.
  3. Stir in the diced potatoes along with the vegetable broth, then bring to a boil.
  4. Once boiling, reduce heat and let it simmer for 15-20 minutes, or until fork-tender.
  5. Using an immersion blender, blend the soup to your desired consistency.
  6. Stir in the milk or cream, then season generously with salt and pepper.
  7. Serve hot, garnished with chopped parsley.

Notes

Pairs well with crusty bread or a fresh salad. Can be frozen for up to 3 months.
