A quick and healthy bowl that captures all the delicious flavors of a classic cheeseburger in just 20 minutes!

Ingredients

  • 1 cup cooked rice or quinoa
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/4 cup diced pickles
  • 1/4 cup diced onions
  • 1/4 cup ketchup
  • 1 tablespoon mustard
  • Salt and pepper to taste
  • Lettuce for serving

Instructions

  1. In a skillet over medium heat, brown the ground beef until cooked through, seasoning with salt and pepper (5-7 minutes).
  2. Stir in the cooked rice or quinoa and mix well.
  3. Add diced tomatoes, pickles, and onions to the skillet.
  4. Drizzle ketchup and mustard over the mixture and stir to combine.
  5. Cook for an additional 2-3 minutes, allowing all flavors to meld together.
  6. Serve in bowls and top with shredded cheese and lettuce.

Notes

For a leaner option, use ground turkey or chicken instead of beef. This dish is excellent for meal prep and can be stored in an airtight container in the fridge for up to 3 days.
