1 cup all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup buttermilk
1 ripe banana, mashed
1 large egg
2 tablespoons melted butter
1/2 teaspoon vanilla extract
Instructions
In a bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
In another bowl, combine the buttermilk, mashed banana, egg, melted butter, and vanilla extract.
Pour the wet ingredients into the dry and stir until just mixed, keeping some lumps.
Heat a skillet over medium heat and grease lightly with butter or oil.
Pour batter onto the skillet for each pancake and cook for 2-3 minutes until bubbles form, then flip and cook for another 1-2 minutes until golden brown.
Serve warm with syrup or desired toppings.
Notes
For best flavor, use very ripe bananas. Keep pancakes warm in a low oven while cooking the rest.
