Deliciously seasoned breakfast potatoes, crispy on the outside and tender on the inside.

Ingredients

  • 4 medium Potatoes
  • 2 tablespoons Olive oil
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • 1 small Onion, chopped
  • Fresh herbs (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and chop the potatoes into cubes. Aim for uniform sizes.
  3. In a bowl, toss the potatoes with olive oil, salt, pepper, paprika, garlic powder, and chopped onion until evenly coated.
  4. Spread the potatoes on a baking sheet in a single layer.
  5. Bake for 25-30 minutes or until golden brown and crispy, stirring halfway through.
  6. Remove from the oven, garnish with fresh herbs if desired, and serve hot.

Notes

Storage: Leftover potatoes can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to restore crispiness.
