Delicious baked taquitos filled with creamy chicken and cheese, offering a crispy exterior without the guilt.

Ingredients

  • 3 cups cooked shredded chicken
  • 1 cup cream cheese, softened
  • 1 cup cheddar cheese, shredded
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 8 small flour or corn tortillas
  • Cooking spray or olive oil for brushing

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the cooked shredded chicken, cream cheese, cheddar cheese, garlic powder, onion powder, cumin, salt, and pepper in a mixing bowl.
  3. Warm the tortillas in a microwave or skillet.
  4. Spoon a portion of the creamy chicken mixture onto each tortilla and roll them up tightly.
  5. Place the rolled taquitos seam-side down on a baking sheet lined with parchment paper.
  6. Spray the taquitos with cooking spray or brush them lightly with olive oil.
  7. Bake for 20-25 minutes, or until golden brown and crispy.
  8. Serve warm with your favorite dips.
