A comforting and creamy beef stroganoff soup that combines tender beef, hearty egg noodles, and a rich broth, perfect for chilly days.

Ingredients

  • 1 lb beef stew meat
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups egg noodles
  • 1 cup sour cream
  • 2 tablespoons flour
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil over medium heat in a large pot.
  2. Add the chopped onions and cook until translucent.
  3. Introduce the minced garlic and beef stew meat, browning the meat on all sides.
  4. Sprinkle flour over the meat and stir to coat evenly.
  5. Pour in the beef broth and Worcestershire sauce. Bring to a boil, then reduce to a simmer.
  6. Add the egg noodles and let it simmer for about 10 minutes.
  7. Stir in the sour cream and season with salt and pepper to taste.
  8. Serve hot, garnished with fresh parsley.

Notes

For a thicker soup, allow it to simmer longer before adding the noodles. Feel free to add vegetables for extra nutrition.
