A guilt-free, creamy ice cream made with cottage cheese and mixed berries, perfect for hot summer days.

Ingredients

  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 24 tablespoons honey or maple syrup (to taste)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Blend the cottage cheese, mixed berries, honey or maple syrup, vanilla extract, and salt until smooth and creamy.
  2. Taste the mixture and adjust sweetness with more honey or maple syrup as desired.
  3. Transfer the mixture to a freezer-safe container and freeze for at least 120 to 180 minutes or until firm.
  4. Scoop out your homemade ice cream and serve, enjoying the creamy berry flavor.

Notes

For an even creamier texture, blend the cottage cheese in two batches. Stir halfway through freezing for a smoother texture.
