A gooey, cheesy dip made with ground beef and Rotel tomatoes that brings people together for any occasion.

Ingredients

  • 1 lb lean ground beef (or mild/hot sausage)
  • 16 oz processed cheese loaf (such as Velveeta, cubed)
  • 10 oz canned diced tomatoes with chilies (such as Rotel, 1 can with juices)
  • 0.5 tsp chili powder (optional)

Instructions

  1. In a large skillet, cook the ground beef or sausage over medium-high heat until no pink remains, about 6–8 minutes.
  2. Drain the excess fat thoroughly.
  3. Turn the heat down to medium for melting the cheese.
  4. Add the cubed processed cheese, the entire can of Rotel tomatoes with juices, and chili powder (if using) to the skillet.
  5. Stir continuously over medium heat until the cheese has fully melted and the dip is smooth and creamy, about 5–7 minutes.
  6. Transfer to a serving bowl or keep warm in the skillet. Serve immediately with tortilla chips for dipping.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove over low heat.
