A quick and delicious breakfast quesadilla filled with fresh blueberries and creamy cheese, perfect for indulging in the morning.

Ingredients

  • 1 large tortilla
  • 1/2 cup fresh blueberries
  • 1/4 cup cream cheese or ricotta cheese
  • 1 tablespoon honey or maple syrup
  • 1/4 teaspoon cinnamon
  • 1 tablespoon butter
  • Optional: chopped nuts or granola for topping

Instructions

  1. In a small bowl, mix the cream cheese, honey, and cinnamon until well combined.
  2. Spread the cream cheese mixture on half of the tortilla.
  3. Scatter the blueberries over the cream cheese.
  4. Fold the tortilla in half to cover the filling.
  5. Heat butter in a skillet over medium heat.
  6. Place the folded quesadilla in the skillet and cook for 2-3 minutes on each side until golden brown.
  7. Remove from the skillet, cut into wedges, and serve warm, optionally topped with chopped nuts or granola.

Notes

Use fresh blueberries for the best flavor. Whole wheat tortillas can be a healthier alternative.
