Hearty breakfast burritos packed with fluffy scrambled eggs, lean meat, and melted cheese, perfect for busy mornings.

Ingredients

  • 4 large eggs
  • 1 cup cooked lean meat (e.g., turkey, chicken, or sausage)
  • 1 cup shredded cheese (e.g., cheddar or pepper jack)
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • 4 large flour tortillas
  • Salt and pepper to taste
  • Cooking oil or spray

Instructions

  1. Heat the oil in a large skillet over medium heat.
  2. Add the diced onions and bell peppers to the skillet and sauté until soft, about 3-4 minutes.
  3. In a bowl, whisk the eggs with salt and pepper.
  4. Pour the whisked eggs into the skillet and gently scramble until fluffy and cooked through.
  5. Stir in the cooked meat and shredded cheese until the cheese is melted.
  6. Warm the tortillas in a separate skillet or microwave until soft.
  7. Place a generous portion of the egg mixture on each tortilla.
  8. Roll up the tortillas tightly around the filling.
  9. Optionally, grill each burrito in the skillet for a couple of minutes until golden brown.
  10. Cool before freezing or enjoy warm.

Notes

You can make these burritos ahead of time and freeze them for up to 3 months. Reheat in the microwave or skillet when ready.
