A comforting casserole with chicken, broccoli, rice, and melty cheese, perfect for busy weeknights.

Ingredients

  • 1 lb chicken breast, cooked and shredded
  • 2 cups cooked rice
  • 2 cups broccoli florets, steamed
  • 2 cups shredded cheddar cheese
  • 1 can cream of chicken soup
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the cooked chicken, cooked rice, steamed broccoli, shredded cheddar cheese, cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper in a large bowl until well combined.
  3. Pour this mixture into a greased 9×13 inch baking dish and spread it out evenly.
  4. Optional: Sprinkle breadcrumbs over the top for added crunch.
  5. Slide the dish into your preheated oven and bake for 25-30 minutes until heated through and cheese is bubbly.
  6. Let the casserole cool for a few minutes before serving.

Notes

Use rotisserie chicken for quicker prep and feel free to swap cheeses or add other veggies.
