A quick and delicious twist on classic tacos featuring creamy white beans and tangy buffalo sauce, perfect for a busy night.

  • 1 can white beans (drained and rinsed)
  • 1/2 cup buffalo sauce
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1 avocado (sliced)
  • Fresh cilantro (for garnish)
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine the white beans and buffalo sauce, mixing well until every bean is coated.
  2. Heat the tortillas in a pan or microwave until warm.
  3. Take each warm tortilla and place a spoonful of the buffalo white bean mixture in the center.
  4. Top with shredded lettuce, diced tomatoes, red onion, and avocado slices.
  5. Garnish with fresh cilantro and season with salt and pepper.
