Burrito Casserole

A comforting, cheesy casserole that combines the beloved flavors of burritos in a simple, layered dish perfect for weeknights.

Ingredients

  • 1 lb ground beef or turkey
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup salsa
  • 2 cups cooked rice
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 8 small flour tortillas
  • 1 packet taco seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brown the ground beef or turkey in a large skillet over medium heat. Drain excess fat.
  3. Add the taco seasoning, black beans, corn, and salsa to the skillet and stir until heated through.
  4. Layer half of the tortillas in a greased 9×13 inch baking dish.
  5. Spread half of the meat mixture evenly over the tortillas.
  6. Add half of the cooked rice and sprinkle with half of the cheese.
  7. Repeat the layering process with the remaining tortillas, meat mixture, rice, and cheese.
  8. Transfer to the oven and bake for 25-30 minutes until the cheese is melted and bubbly.
  9. Cool for a few minutes before serving.

Notes

Customize with spicy jalapeños or additional veggies as desired. Leftovers taste even better the next day!
