  • 2 chicken breasts, cut into strips
  • 8 oz penne pasta
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons Cajun seasoning
  • 1 can diced tomatoes (drained)
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Cook the penne pasta according to the package instructions. Once it’s al dente, drain and set aside.
  2. Sauté the chicken strips in olive oil over medium heat, seasoning with Cajun seasoning, salt, and pepper.
  3. Add minced garlic to the skillet once the chicken is golden and cook for about a minute until fragrant.
  4. Create the creamy base by stirring in heavy cream and Parmesan cheese, mixing until well combined.
  5. Combine the drained diced tomatoes and cooked penne pasta with the sauce, tossing until well coated.
  6. Serve hot, garnished with freshly chopped parsley.

Notes

For a twist, consider adding bell peppers or spinach. Adjust the spice level by modifying the amount of Cajun seasoning to taste.
