A delightful and moist cake inspired by classic cannoli, filled with ricotta and chocolate chips, perfect for any occasion.

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 cup ricotta cheese
  • 1/2 cup mini chocolate chips
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, mix together the flour, baking powder, baking soda, and salt.
  3. Cream the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition, and stir in vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, alternating with buttermilk.
  6. Fold in the ricotta cheese and mini chocolate chips evenly throughout the batter.
  7. Divide the batter equally between the prepared pans and smooth the tops.
  8. Bake for 25-30 minutes, or until a toothpick comes out clean.
  9. Allow to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  10. Dust with powdered sugar before serving.
