  • 1 shortcrust pastry
  • 2 large onions, sliced
  • 2 tablespoons butter
  • 3 large eggs
  • 1 cup heavy cream
  • 1 cup grated cheese (e.g., cheddar and gruyère)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Roll out the shortcrust pastry on a lightly floured surface to fit your quiche dish.
  3. Pre-Bake the pastry for about 10 minutes until lightly golden.
  4. Caramelize the onions in a skillet with melted butter until golden brown (15-20 minutes).
  5. Whisk together the eggs, heavy cream, salt, and pepper in a large bowl.
  6. Combine the caramelized onions and grated cheese into the egg mixture.
  7. Pour the mixture into the pre-baked pastry shell.
  8. Bake for 30-35 minutes until the filling is set and golden brown.
  9. Cool slightly before serving.
