Delightful and cheesy cauliflower cakes that are perfect for sneaking in extra vegetables into your meals.

Ingredients

  • 1 head of cauliflower, riced
  • 1 cup shredded cheddar cheese
  • 2 eggs
  • 1/2 cup breadcrumbs
  • 2 green onions, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Rinse and prepare the cauliflower by removing stems and cutting into smaller pieces. Steam or microwave until tender, about 4-6 minutes. Rice the cauliflower using a food processor or box grater.
  2. Mix the riced cauliflower, cheddar cheese, eggs, breadcrumbs, green onions, garlic powder, onion powder, salt, and pepper in a large mixing bowl until well combined.
  3. Shape the mixture into cakes or patties, about the size of a golf ball pressed flat.
  4. Heat olive oil in a skillet over medium heat, coating the bottom of the pan.
  5. Cook the cauliflower cakes in the skillet for about 4-5 minutes on each side until golden brown and crispy.
  6. Serve the cakes warm and enjoy!
