A cheesy twist on a classic meatloaf, perfect for a comforting weeknight dinner.

  • 1 lb Ground Beef (80/20 is ideal for juicy flavor)
  • 1 cup Breadcrumbs (Try soaking panko in milk for extra moisture)
  • 1 medium Chopped Onion (Sautéing can mellow out flavor)
  • 2 large Eggs (Using room temperature eggs helps mixing)
  • 1 tsp Garlic Powder (Feel free to substitute fresh minced garlic)
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 cup Shredded Cheddar Cheese (Freshly shredded cheese makes a difference)
  • 1 tsp Italian Seasoning (Optional but highly recommended)
  • 1/4 cup Milk (An extra egg can substitute for dairy-free)
  • 1/4 cup Ketchup (Barbecue sauce can add a twist)
  • 1 cup Additional Cheese (For the gooey finish)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Sauté the Onions: In a skillet over medium heat, sauté the chopped onion until soft and translucent, about 5 minutes.
  3. Prepare the Meat Mixture: In a large mixing bowl, combine the ground beef, breadcrumbs, sautéed onions, eggs, garlic powder, salt, black pepper, and optional Italian seasoning.
  4. Add Milk and Ketchup: Pour in the milk and ketchup, mixing until everything is fully incorporated.
  5. Layer the Cheese: Stir in 1 cup of shredded cheddar cheese.
  6. Transfer to Baking Dish: Spoon the meat mixture into a greased 9×13-inch baking dish.
  7. Top with Cheese: Sprinkle the additional 1 cup of cheese on top.
  8. Bake: Bake in the preheated oven for 45 minutes, or until the cheese is bubbly and golden.
  9. Let It Rest: Once out of the oven, let the casserole rest for about 10 minutes.
  10. Serve: Cut into squares and serve warm.

Notes

For best results, use freshly shredded cheese and room temperature ingredients.
