A warm, creamy Cheesy Potato Soup that brings comfort during chilly days, filled with three types of cheese and Yukon Gold potatoes.

Ingredients

  • 4 Yukon Gold potatoes, diced
  • 1 onion, chopped
  • 2 tablespoons butter
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • Salt, to taste
  • Pepper, to taste
  • Fresh herbs (optional for garnish)

Instructions

  1. Sauté the onions in a large pot with melted butter over medium heat until softened.
  2. Boil the diced Yukon Gold potatoes and broth; bring to a boil, then simmer until tender.
  3. Mash the potatoes using a potato masher or immersion blender, adding heavy cream for a creamy texture.
  4. Melt in the cheddar, mozzarella, and Parmesan until fully incorporated.
  5. Season with salt and pepper; serve hot with crusty bread and garnish with fresh herbs if desired.

Notes
