A delightful pasta dish featuring roasted cherry tomatoes, garlic, and fresh herbs, capturing the essence of summer flavors.

Ingredients

  • 2 cups cherry tomatoes
  • 3 cloves garlic, minced
  • 1/4 cup fresh herbs (basil, oregano)
  • 12 oz pasta (spaghetti or penne)
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the cherry tomatoes in half and place them on a baking sheet.
  3. Drizzle the halved tomatoes with olive oil, then season with salt, pepper, and minced garlic.
  4. Roast the tomatoes in the oven for 20-25 minutes until blistered and caramelized.
  5. Cook the pasta according to package instructions in a pot of boiling salted water.
  6. Drain the pasta and toss it with the roasted tomatoes, garlic-infused olive oil, and fresh herbs.
  7. Serve topped with grated Parmesan cheese and a drizzle of olive oil.
