Delicious Chicken Avocado Burrito filled with creamy avocado, tender chicken, and fresh herbs, perfect for a quick weeknight meal or casual gatherings.

  • 4 large burrito-size flour tortillas
  • 1 pound cooked chicken (shredded or sliced)
  • 1 large avocado (diced)
  • 1 cup shredded mild melting cheese
  • 12 tbsp fresh jalapeños (sliced)
  • 0.25 cup salsa verde
  • 0.25 cup sour cream or Greek yogurt
  • 23 tbsp fresh cilantro or parsley (chopped)
  • 1 tbsp fresh chives (chopped, optional)
  • 1 tsp fresh basil or dill (chopped, optional)
  • Salt and black pepper (to taste)
  • Lime wedges (for serving, optional)

Instructions

  1. Heat your tortillas by microwaving them wrapped in a damp paper towel for 20-30 seconds or warming them over a gas flame until flexible.
  2. Lay each tortilla flat and divide the cooked chicken evenly among them, seasoning lightly with salt and black pepper.
  3. Add diced avocado atop the chicken, followed by shredded cheese and fresh herbs; add jalapeño slices for extra spice.
  4. Spoon salsa verde over the fillings and add a dollop of sour cream or Greek yogurt.
  5. To wrap, fold in the sides of each tortilla and roll tightly from the bottom up.
  6. Place the burritos seam-side down in a heated dry skillet and cook for 2-3 minutes per side until golden and crispy.
  7. Slice each burrito in half diagonally and serve with extra salsa, herbs, and lime wedges.

Notes
