A comforting and delicious Chicken Broccoli Rice Casserole that brings family together around the dinner table.

Ingredients

  • 2 cups cooked rice
  • 1 pound chicken breast, diced
  • 2 cups broccoli florets
  • 1 can cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked rice, diced chicken, broccoli, cream of chicken soup, milk, garlic powder, salt, and pepper. Mix well until all the ingredients are evenly coated.
  3. Pour the mixture into a greased casserole dish, spreading it out evenly. Top it off with shredded cheddar cheese and breadcrumbs if desired.
  4. Cover the dish with aluminum foil and bake for 30 minutes.
  5. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  6. Let the casserole cool slightly before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months. You can use leftover chicken or rotisserie chicken for convenience.
