A creamy, comforting chicken dish filled with savory flavors and made for sharing with loved ones.

Ingredients

  • 2 cups cooked chicken, diced
  • 1 cup mushrooms, sliced
  • 1/2 cup peas
  • 1/2 cup pimentos, diced
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 cup chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Cooked rice, egg noodles, biscuits, or pastry for serving

Instructions

  1. Melt the butter in a large skillet over medium heat.
  2. Add the mushrooms and sauté until they are tender.
  3. Stir in the flour and cook for 1-2 minutes, stirring constantly.
  4. Add the chicken broth gradually, whisking to prevent lumps.
  5. Add the heavy cream and bring to a simmer.
  6. Stir in the chicken, peas, and pimentos.
  7. Cook until heated through and slightly thickened.
  8. Season with salt and pepper to taste.
  9. Serve hot over rice, egg noodles, or with biscuits or pastry.

Notes

For a lighter version, substitute half-and-half for heavy cream. Leftovers can be stored for up to 3 days in the refrigerator.
