  • 8 oz mushrooms, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the Base: In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onions and minced garlic, sautéing until soft and fragrant.
  2. Add the Mushrooms: Toss in the sliced mushrooms. Cook them until they are browned and have released their moisture.
  3. Stir in the Chicken: Incorporate the cooked and shredded chicken into the pot, followed by the chicken broth, thyme, salt, and pepper.
  4. Bring to a Boil: Increase the heat to bring the mixture to a boil. Once bubbling, reduce the heat and let it simmer for 15 minutes.
  5. Cream it Up: After simmering, stir in the heavy cream, and heat through for a few more minutes.
