A delightful Chicken Piccata Pasta featuring tender chicken, zesty lemon, and briny capers in a buttery garlic sauce.

Ingredients

  • 2 chicken breasts, cut into bite-sized pieces
  • 8 oz pasta (such as linguine or fettuccine)
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup white wine
  • 1 lemon (zested and juiced)
  • 2 tablespoons capers
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta according to package instructions. Once done, drain and set aside.
  2. Sauté the chicken in a large skillet with olive oil, seasoning with salt and pepper, until golden brown. Remove and set aside.
  3. Sauté the garlic in the same skillet with melted butter until fragrant.
  4. Create the sauce by pouring in the white wine and adding the lemon juice and zest. Let simmer to reduce.
  5. Incorporate the capers and return the chicken to the skillet, mixing well.
  6. Combine the cooked pasta with the sauce and toss gently on low heat.
  7. Garnish with chopped fresh parsley before serving.
