A quick and flavorful chicken scampi dish featuring tender chicken breasts and pasta in a garlic white wine sauce.

  • 2 boneless, skinless chicken breasts
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup white wine
  • 1 tablespoon lemon juice
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley, chopped
  • Pasta (spaghetti or linguine) for serving

Instructions

  1. Cook pasta according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Season the chicken breasts with salt and pepper. Add to the skillet and cook until browned and cooked through, about 6-7 minutes per side. Remove and set aside.
  4. In the same skillet, add garlic and red pepper flakes, sautéing for about 1 minute until fragrant.
  5. Pour in white wine and lemon juice, scraping the bottom of the pan to deglaze. Let it simmer for about 5 minutes to reduce and intensify the flavors.
  6. Slice the cooked chicken and return it to the skillet, allowing the flavors to meld.
  7. Add the cooked pasta to the skillet, tossing everything together so the pasta is well-coated in the sauce.
  8. Garnish with fresh parsley before serving.

Notes

For extra flavor, pair with a Caesar salad and garlic bread. Store leftovers in an airtight container for up to 3 days.
