A heartwarming chicken stew filled with tender chicken, hearty vegetables, and fragrant broth, perfect for nourishing family meals.

  • 1.5 lbs boneless chicken thighs or breasts, cut into chunks
  • 4 cups chicken broth
  • 3 carrots, diced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 stalks celery, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 tablespoon olive oil (optional)

Instructions

  1. Sauté the chicken: Heat olive oil (if using) in a skillet over medium-high heat. Add the chicken chunks and brown them for about 5 minutes until golden.
  2. Combine ingredients in the slow cooker: In your slow cooker, combine the browned chicken, chicken broth, diced carrots, potatoes, chopped onion, minced garlic, diced celery, dried thyme, and rosemary. Season generously with salt and pepper.
  3. Stir everything together: Give everything a good stir to ensure the ingredients are well mixed and the chicken is fully submerged in the broth.
  4. Set the slow cooker: Cover and choose your cooking mode: cook on low for 6-8 hours or high for 4-5 hours.
  5. Adjust seasoning: Once cooking time is up, taste the stew and add more salt or pepper if needed.
  6. Serve warm: Ladle the stew into bowls and serve warm.
