A comforting Chicken Stroganoff dish perfect for weeknight dinners, served over tender egg noodles or fettuccine.

Ingredients

  • 1 lb chicken breast, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup chicken broth
  • 1 cup sour cream
  • 2 tbsp flour
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Egg noodles or fettuccine, for serving

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the diced chicken to the hot skillet and cook until browned all over, about 5-7 minutes.
  3. Stir in the chopped onion, minced garlic, and sliced mushrooms, cooking until softened, about 5 minutes.
  4. Sprinkle the flour over the mixture and stir well to combine.
  5. Add the chicken broth gradually, stirring constantly until the sauce begins to thicken.
  6. Reduce the heat and fold in the sour cream until well combined.
  7. Season your Stroganoff with salt and pepper to taste and serve over cooked egg noodles or fettuccine.

Notes

For added flavor, consider garnishing with fresh parsley or chives. Leftovers can be stored in an airtight container for up to 3 days.
