A hearty and flavorful Chicken Tortilla Soup, filled with tender chicken, zesty tomatoes, and crunchy tortilla strips.

Ingredients

  • Shredded chicken
  • Canned or cooked beans
  • Canned or frozen corn
  • Canned or fresh tomatoes
  • Chicken broth
  • Mexican spices (cumin, chili powder, etc.)
  • Tortilla strips
  • Cheese (for topping)
  • Avocado (for topping)
  • Sour cream (for topping)
  • Onion (optional)
  • Garlic (optional)

Instructions

  1. Sauté onion and garlic in a large pot until softened.
  2. Add shredded chicken, beans, corn, and tomatoes to the pot.
  3. Pour in chicken broth and stir in Mexican spices.
  4. Bring the mixture to a boil, then reduce to a simmer for 20 minutes.
  5. Serve hot, topped with tortilla strips, cheese, avocado, and sour cream.

Notes

For extra flavor, use rotisserie chicken or add chipotle peppers for smokiness. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
