Chili’s Southwest Eggrolls

Crispy eggrolls filled with a delicious medley of chicken, black beans, and corn, perfect as an appetizer or main dish.

Ingredients

  • 1 cup shredded chicken
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 cup diced bell peppers
  • 1 cup shredded cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1 package eggroll wrappers
  • Oil for frying

Instructions

  1. In a mixing bowl, combine shredded chicken, black beans, corn, diced bell peppers, shredded cheese, cumin, chili powder, and garlic powder. Mix until well incorporated.
  2. Lay an eggroll wrapper flat on your work surface, with the points of the diamond shape facing you.
  3. Place about 2 tablespoons of the filling mixture in the center of the wrapper.
  4. Fold the sides of the wrapper over the filling, then roll tightly from the bottom to the top, sealing inside.
  5. In a deep pan, heat oil over medium heat, ensuring enough oil to fry the eggrolls completely.
  6. Carefully place the rolled eggrolls into the hot oil, frying until golden brown and crispy, about 3-4 minutes per side.
  7. Once fried, remove the eggrolls and allow them to drain on paper towels. Serve hot with your favorite dipping sauce.

Notes

These eggrolls can be made ahead of time and fried just before serving. Experiment with different fillings for variety.
