A simple and delicious Chipotle Chicken Bowl filled with brown rice, tender chicken, and vibrant toppings.

Ingredients

  • 2 cups cooked brown rice
  • 1 lb chicken breast, cooked and diced
  • 1 can black beans, rinsed and drained
  • 1 cup corn kernels, cooked
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 cup shredded cheese
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lime juice
  • 1 tsp chipotle seasoning
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine cooked brown rice, chicken, black beans, and corn.
  2. Add cherry tomatoes, avocado, and shredded cheese on top.
  3. Drizzle with lime juice and sprinkle with chipotle seasoning, salt, and pepper.
  4. Toss gently to combine all ingredients.
  5. Garnish with fresh cilantro.
