A delicious twist on breakfast combining rich chocolate brownie flavors with healthy oatmeal, perfect for busy mornings.

  • 2 cups rolled oats
  • 1/3 cup cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs
  • 1/3 cup maple syrup
  • 1/4 cup coconut oil
  • 1 1/2 cup almond milk
  • 1 tsp vanilla extract
  • 1 cup chocolate chips (plus extra for sprinkling on top)
  • Optional toppings: peanut butter, whipped cream, maple syrup, nuts

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. In a large mixing bowl, stir together the rolled oats, cocoa powder, baking powder, and salt.
  3. In a separate bowl, whisk together the eggs, almond milk, maple syrup, coconut oil, and vanilla extract.
  4. Pour the wet ingredient mixture into the dry ingredients and stir until thoroughly combined.
  5. Fold in the chocolate chips, pour the batter into the prepared dish, and sprinkle more chocolate chips on top.
  6. Bake for 45-50 minutes until set and a toothpick comes out mostly clean.
  7. Let cool for about 10 minutes before serving. Add optional toppings and enjoy!
