  • 1 teaspoon chili powder

Instructions

  1. Whisk Together the Marinade: In a bowl, combine lime juice, minced garlic, chopped cilantro, cumin, chili powder, salt, and pepper.
  2. Marinate the Chicken: Add the chicken thighs to the marinade, ensuring each piece is well-coated. Let it sit for at least 30 minutes.
  3. Preheat the Grill or Oven: Preheat your grill or oven to 400°F (200°C).
  4. Cook the Chicken Thighs: For grilling, cook the chicken thighs for about 6-7 minutes on each side. For baking, place marinated thighs on a baking sheet and bake for 25-30 minutes.

Notes

For extra tender chicken, pound the thighs to an even thickness before marinating. To add heat, include chopped jalapeño or cayenne pepper in the marinade.
