Ingredients

Scale
  • 4 cod fillets
  • 2 cups potatoes, diced
  • 1 cup heavy cream
  • 2 tablespoons fresh rosemary, chopped

  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Boil the potatoes in salted water until tender, about 10-15 minutes. Drain and set aside.
  2. Sear the cod fillets in a skillet with heated olive oil, seasoned with salt and pepper, cooking for about 4-5 minutes per side.
  3. Create the cream sauce by melting butter in the same skillet, adding heavy cream, and simmering with chopped rosemary for 3-4 minutes.
  4. Combine the cooked potatoes into the sauce, mixing well to coat them.
  5. Serve the cod topped with the rosemary cream sauce and potatoes alongside. Enjoy!

Notes

This dish pairs well with a crisp green salad or roasted seasonal vegetables. A glass of white wine complements it beautifully.
