Ingredients

  • 2 large Potatoes, diced
  • 1 Onion, diced
  • 1 Bell pepper, diced
  • Salt, to taste
  • Pepper, to taste
  • Olive oil or butter

Instructions

  1. Dice the potatoes into small, even cubes and boil in salted water until just tender, about 10-12 minutes. Drain and set aside.
  2. Heat a generous drizzle of olive oil or a pat of butter in a large skillet over medium heat.
  3. Add the diced onions and bell peppers to the skillet, sautéing until soft and fragrant, about 5 minutes.
  4. Stir in the boiled potatoes and diced corned beef, mixing gently to combine.
  5. Season with salt and pepper, then increase heat and cook until golden brown and crispy on the edges, about 10 minutes.
  6. Serve hot, optionally topped with a fried egg or sprinkle of fresh herbs.
