A comforting and cheesy casserole with layers of tender potatoes, savory corned beef, and gooey cheddar cheese, perfect for family gatherings.

Ingredients

  • 4 cups cooked potatoes, sliced
  • 2 cups cooked corned beef, shredded
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the sour cream, milk, garlic powder, onion powder, salt, and pepper. Whisk until smooth.
  3. In a greased baking dish, layer half of the potatoes, corned beef, and cheese.
  4. Pour half of the creamy mixture over the first layer.
  5. Repeat the layers with the remaining ingredients.
  6. Sprinkle breadcrumbs on top if using.
  7. Place the dish in the oven and bake for about 30-40 minutes, until the cheese is bubbly and golden.
  8. Let cool for a few minutes, then serve warm.

Notes

Pairs well with a simple green salad or roasted vegetables. Can be stored in the fridge for 3-4 days.
