Light and fluffy cloud bread made with cottage cheese and fresh blueberries, perfect for breakfast or snacks.

Ingredients

  • 1 cup cottage cheese
  • 3 large eggs
  • 1/4 cup almond flour
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup blueberries
  • 1 tablespoon honey or sweetener (optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the cottage cheese, eggs, and vanilla extract until smooth.
  3. In another bowl, whisk together the almond flour, all-purpose flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Gently fold in the blueberries and honey if using.
  6. Spoon the batter onto the prepared baking sheet, forming small rounds.
  7. Bake for 15-20 minutes, or until the edges are golden and the bread is cooked through.
  8. Allow to cool slightly before serving.
