Delightful pumpkin cake bars that are moist, tender, and perfectly spiced, perfect for fall baking.

Ingredients

  • 1 cup pumpkin purée
  • 1 cup cottage cheese
  • 1/2 cup sugar or honey
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. Combine the pumpkin purée, cottage cheese, sugar (or honey), vegetable oil, eggs, and vanilla extract until smooth.
  3. Whisk together the flour, baking powder, baking soda, spices, and salt in another bowl.
  4. Mix the dry ingredients into the wet ingredients, stirring until just combined.
  5. Pour the batter into the prepared baking dish and spread it evenly.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool completely in the dish before cutting into bars.

Notes

Serve with whipped cream or vanilla ice cream. Store in an airtight container at room temperature for up to three days. Refrigerate for up to a week, or freeze for up to three months.
