A hearty and comforting casserole with layers of savory beef, beans, and sweet corn topped with golden cornbread and cheese.

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 box cornbread mix
  • 1 egg (for cornbread mix)
  • 1 cup milk (for cornbread mix)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Sauté the ground beef in a skillet over medium heat until browned; drain excess fat.
  3. Stir in black beans, corn, and taco seasoning; cook until heated through.
  4. Transfer the beef mixture to a greased baking dish, spreading it evenly.
  5. Mix the cornbread mix according to package instructions, adding egg and milk.
  6. Assemble the layers by pouring the cornbread batter over the beef mixture.
  7. Sprinkle cheese generously on top.
  8. Bake for 25-30 minutes until golden brown and a toothpick comes out clean.
  9. Cool slightly before serving.
