Delicious and tender scones flavored with fresh cranberries and zesty orange zest, perfect for breakfast or brunch.

  • 2 cups all-purpose flour
  • 1/3 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cold butter, cubed
  • 1/2 cup fresh cranberries, chopped
  • 1 tablespoon orange zest
  • 1/2 cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mix together the flour, sugar, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the cranberries and orange zest.
  5. In a separate bowl, whisk together the cream, egg, and vanilla.
  6. Add the wet ingredients to the dry ingredients and mix until just combined.
  7. Turn the dough out onto a floured surface and knead it a few times until it comes together.
  8. Pat the dough into a circle about 1 inch thick and cut into wedges.
  9. Place the scones on the prepared baking sheet and bake for 15-20 minutes or until golden brown.
  10. Allow to cool slightly before serving.

Notes

Store leftover scones in an airtight container for up to 2 days, or freeze for up to a month.
