  • 1 cup cottage cheese
  • 1 lb ground turkey
  • 1 cup mixed vegetables (e.g., peas, carrots, bell peppers)
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Grated parmesan cheese (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat and sauté minced garlic for about 1 minute until fragrant.
  3. Add ground turkey to the skillet, cook until browned, breaking it up with a spoon, and season with salt and pepper.
  4. Once turkey is browned, stir in mixed vegetables and cook until tender.
  5. Reduce heat to low, then add cottage cheese and cooked pasta, mixing until combined and heated through.
  6. Serve topped with grated parmesan cheese, if desired, and enjoy!

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently with a splash of water or broth.
