Creamy Garlic Cheesy Chicken and Potatoes

A comforting dish combining tender chicken, creamy goodness, and crispy potatoes, perfect for a chilly evening.

  • 4 chicken breasts
  • 4 medium potatoes, diced
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat the olive oil over medium heat. Sear the chicken breasts until browned on both sides, about 4-5 minutes per side.
  3. Remove the chicken and set it aside. In the same skillet, add the minced garlic and sauté until fragrant, about 30 seconds.
  4. Add the diced potatoes to the skillet, season with salt and pepper, and cook for about 5 minutes.
  5. Pour in the heavy cream and stir in half of the cheddar cheese, mixing well.
  6. Return the chicken to the skillet, placing it snugly amid the potatoes and sauce. Cover and transfer the whole skillet to the oven.
  7. Bake for 25-30 minutes until the chicken is cooked through and the potatoes are tender.
  8. Remove from the oven, sprinkle the remaining cheese on top, and return to the oven until melted, about 5 minutes.
  9. Garnish with fresh parsley and serve hot.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently with a splash of water or cream.
