A comforting and creamy pasta dish featuring tender chicken and zesty lemon, perfect for cozy evenings.

Ingredients

  • 1 lb chicken breast, diced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup fresh spinach
  • 1 cup heavy cream
  • 1 cup parmesan cheese, grated
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juiced and zested
  • Salt and pepper to taste

Instructions

  1. Sauté the chicken in olive oil over medium heat until browned (5-7 minutes). Add garlic and sauté for 1 more minute.
  2. Pour in chicken broth and bring to a boil. Add orzo and cook according to package instructions (8-10 minutes).
  3. Reduce heat and stir in heavy cream and parmesan until melted and creamy.
  4. Toss in fresh spinach and lemon juice, stirring gently until spinach wilts.
  5. Finish with lemon zest and season with salt and pepper to taste before serving hot.

Notes

For a lighter version, use half-and-half instead of heavy cream or substitute chicken with shrimp.
