A delightful Italian dish with pasta, chicken, cherry tomatoes, and spinach in a creamy sauce, perfect for weeknight dinners or special occasions.

Ingredients

  • 8 oz pasta (penne or fettuccine)
  • 1 lb chicken breast, sliced
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the sliced chicken and cook until browned and cooked through. Remove chicken and set aside.
  3. Add minced garlic to the same skillet and cook for about 30 seconds until fragrant.
  4. Add cherry tomatoes and cook until they start to soften, about 3-4 minutes.
  5. Stir in spinach and cook until wilted.
  6. Reduce heat and add heavy cream and Parmesan cheese, stirring to combine. Season with salt and pepper.
  7. Add cooked pasta and chicken back into the skillet, tossing to coat in the creamy sauce.
  8. Serve garnished with fresh basil.

Notes

For a lighter version, substitute half-and-half for the heavy cream or use whole wheat pasta.
