  • 8 oz Mushrooms (Fresh varieties such as cremini or shiitake)
  • 2 tbsp Olive Oil (Can substitute with butter)
  • 23 cloves Garlic (Freshly minced)
  • 2 cups Fresh Spinach (Can substitute with kale)
  • 1 cup Heavy Cream (Substitute with half-and-half or coconut milk for less calories)
  • 1/2 cup Parmesan Cheese (Can use nutritional yeast for a vegan option)
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Boil the Pasta: Start by bringing a pot of salted water to a boil. Once boiling, add your pasta and cook according to package instructions until al dente. Drain and set aside.
  2. Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.
  3. Cook the Mushrooms: Toss in the sliced mushrooms and season with a pinch of salt and pepper. Sauté until they are golden and tender, about 5-7 minutes.
