Delightful crispy breakfast potatoes that bring a satisfying crunch and flavorful blend to your brunch table.

  • 4 medium golden potatoes (diced into ½-inch cubes)
  • 2 tablespoons olive or avocado oil
  • To taste salt
  • To taste pepper
  • 1 tablespoon Old Bay seasoning
  • 4 slices bacon (or substitute with smoked tofu for plant-based)
  • 23 cloves garlic (minced)
  • 2 tablespoons pure maple syrup (or agave syrup as vegan alternative)
  • To taste fresh parsley or chives (optional)

Instructions

  1. Begin by washing and dicing your golden potatoes into ½-inch cubes.
  2. Toss the diced potatoes with olive oil, salt, pepper, and Old Bay seasoning.
  3. Cook the bacon in a skillet over medium heat until crispy.
  4. Add a little oil if necessary and toss in the minced garlic, stirring until fragrant.
  5. Add the seasoned potatoes to the skillet, allowing them to sear untouched for about 5 minutes.
  6. Drizzle in the maple syrup when the potatoes are nearly finished, tossing gently.
  7. Crumble the cooked bacon or crispy tofu over the potatoes and finish with fresh parsley or chives.

Notes

For best results, use waxy potatoes like Yukon Gold. Experiment with different herbs and spices to suit your taste.
