  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup cooked quinoa or rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • Tzatziki sauce for serving

Instructions

  1. In a bowl, mix olive oil, garlic powder, onion powder, paprika, salt, and pepper.
  2. Rub the spice mixture all over the chicken breasts.
  3. Heat a skillet over medium heat and cook the chicken for about 6-7 minutes on each side until golden brown and juices run clear.
  4. Let the chicken rest for a few minutes.
  5. In a large serving bowl, combine cooked quinoa or rice, cherry tomatoes, cucumber, red onion, feta cheese, and parsley.
  6. Top the mixture with sliced chicken and drizzle with tzatziki sauce before serving.

Notes

Let the meat rest after cooking to keep it juicy. You can swap quinoa for rice or couscous. Adjust spices to your taste.
