Delightful crispy chicken taquitos filled with shredded chicken, cheese, and spices, perfect for any gathering.

Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup refried beans
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 1012 small corn or flour tortillas
  • Oil for frying

Instructions

  1. Combine the shredded chicken, cheese, refried beans, garlic powder, cumin, chili powder, salt, and pepper in a bowl. Mix well.
  2. Heat tortillas in a dry skillet until soft to prevent cracking.
  3. Place about 2 tablespoons of the chicken mixture on one end of each tortilla and roll tightly.
  4. Secure with a toothpick if necessary.
  5. Heat oil in a pan over medium heat until hot.
  6. Fry taquitos until golden brown and crispy, about 3-4 minutes per side.
  7. Drain on paper towels and serve with salsa or dipping sauce.

Notes
