A delightful mix of flavors and textures in a quick and customizable chicken fried rice recipe, brightened with crispy garlic and colorful veggies.

  • 2 cups cooked rice
  • 1 cup cooked chicken, diced
  • 2 eggs, beaten
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1 cup mixed vegetables (peas, carrots, etc.)
  • Salt and pepper, to taste
  • Green onions, chopped (for garnish)

Instructions

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Add minced garlic and sauté until fragrant, stirring occasionally to prevent burning.
  3. Push the garlic to one side of the skillet and pour beaten eggs into the other side. Scramble the eggs until fully cooked, then combine.
  4. Add the cooked chicken to the skillet and stir to combine with the eggs and garlic.
  5. Add the cooked rice and mixed vegetables to the skillet. Pour soy sauce over the top and stir everything together until well-mixed and heated through.
  6. Season with salt and pepper to taste. Continue to cook until everything is evenly heated and well combined.
  7. Garnish with chopped green onions before serving, and enjoy your delicious meal!

Notes

Use day-old rice for the best texture. Adjust soy sauce to your taste preferences.
