A comforting chicken pot pie made easy in a slow cooker, filled with tender chicken, vegetables, and a creamy sauce.

  • 2 cups cooked, shredded chicken
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 cup potatoes, diced
  • 1/2 cup onion, chopped
  • 1/4 cup celery, chopped
  • 2 cups chicken broth
  • 1 can cream of chicken soup
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 package refrigerated biscuit dough or pie crust

Instructions

  1. Combine ingredients in the slow cooker: In a slow cooker, combine the shredded chicken, diced carrots, peas, diced potatoes, chopped onion, and chopped celery.
  2. Whisk together sauce: Mix together the chicken broth, cream of chicken soup, garlic powder, thyme, salt, and pepper. Then pour this mixture over the chicken and vegetables.
  3. Slow cook to perfection: Cover and cook on low for 6-8 hours.
  4. Add biscuit dough or pie crust: About 30 minutes before serving, add the biscuit dough or crust on top.
  5. Bake until golden: Cover and cook until the biscuits are golden brown and cooked through.
  6. Serve hot and enjoy: Serve hot and savor the comforting flavors of your chicken pot pie.

Notes

For added flavor, sauté the onion and celery before adding to the slow cooker. You can also use frozen vegetables without adjusting the recipe significantly.
